  • ½ cup roasted butternut squash puree (ensure that it’s well mashed)

Instructions for baking:

  1. Preheat the oven to 350°F. Grease the cupcake pans or alternatively use the liners.
  2. Combine milk, butter, and apple cider in a vessel. Let it curdle for 8 minutes.
  3. Beat in the rest of the wet ingredients. Ensure post-mixing, the ingredients form one smooth liquid with even consistency.
  4. Now, slowly add Ucopia’s Vanilla Cake dry mix until it mixes with the liquid well.
  5. Fill the cupcake sections halfway with batter. Bake them for 20 minutes. The cake would start to rise and turn light golden brown.
  6. Let it rest for 2 minutes out of the oven once the baking is completed. Then, remove them from the pans and allow them to cool for another 30 minutes.

Points to keep in mind:

  • Don’t cut into the slices too soon or else they will be gummy.
  • Allow them to fully cool before icing.
