Age spots on bananas can be great, because then you get to make banana bread.

Ingredients: organic arrowroot starch, brown sugar, organic cane sugar, organic teff flour, organic quinoa flour, organic millet flour, organic sorghum flour, baking soda, cinnamon, nutmeg, baking powder, pink salt.

Ucopia is about bringing back food favorites. It’s ok to be possessive over the last 3 bananas, you will need them!

Also makes 12 banana muffins for breakfast to go.

Baking Instructions:

Ingredients Needed:
3 black spotted bananas peeled (1 cup mashed)
2 “better than eggs” or eggs or egg replacer (2 tbsp chia/flax meal with 8 tbsp water)
1/2 cup of oil
1 tsp vanilla extract
(optional) 1/4 cup of nuts or chocolate chips

Step 1:
Preheat oven to 350°F
Prepare 2x “Better Eggs” (2 tbsp with 8 tbsp water) and allow to gel for 5 minutes.

Step 2:
Mash bananas with wet ingredients.

Step 3:
Add package mix to wet ingredients.
Stir to completely combine.
**Add nuts or chocolate chips if desired in this step or next step if desired on top (1/4 cup)

Step 4:
Pour batter into a non-stick 4-1/2 in. x 8-1/2 in. baking loaf pan. Gluten-free performs better in a smaller pan.

Step 5:
Bake for 75 to 80 minutes until dark brown.
Remove immediately from pan and cool on wire rack.
Be sure to cook fully & Enjoy.

Step 6:
Remove from oven and let cool before eating. Eat within 48 hours or freeze to ensure freshness. Not recommended to slice loaf before freezing as it will dry out.
